Chawali ki kheer – Indian Rice Pudding
Most of us love kheer, the sweet rice pudding, which is offered to the havan and afterwards shared as prasaad.
Here is how to prepare it.
For 4 servings you will need:
280 ml Basmati rice
600 ml full cream milk
-15-15120 ml sugar
1/2 tsp cardamom powder
Some strands of saffron
1Tbsp chopped almonds
1Tbsp cashew nuts
1Tbsp raisins
Preparation:
- Wash rice under running cold water until clear
- Soak in cold water 20-30 min.
- While rice is soaking, chop the nuts
- After rice has soaked, discard the water.
Cooking kheer:
Put milk into pan and bring to boil
Add rice, stir, and let simmer on medium heat for about 20 min.
Don’t allow it to stick to pan, so stir every 5 minutes until tender
Then add sugar and cardamom powder, stir well
Add saffron strands, chopped cashews, almonds and raisins
Mix well, turn off the heat and allow to sit for a while
(remember rice keeps expanding and uses up fluids even after you turn off the heat.)
